I guess Matt Goulding's Rice Noodle Fish (2015) is essentially a travel book, but it is a also a collection of stories about people, known as shokunin, who have devoted themselves to perfecting an aspect of the food culture of Japan. Although some of the people profiled by Goulding are not Japanese by birth. The book starts out with a correspondence with Anthony Bourdain-in which Goulding gets his blessing for the project. The book is divided into the different regions that he traveled (Tokyo, Osaka, Kyoto, Fukuoka, Hiroshima, Hokkaido, Noto) followed by Plus-a feature that focuses on some aspect of Japanese culture as well as other mini-essays on Japanese food and other things Japanese. Much of the information was somewhat redundant for me, but I did learn some things about the food culture. I enjoyed the stories. But I enjoyed meeting Ken Yokoyama, former hotel concierge that helped Goudling navigate kaiseki ryori in Kyoto, and Fernando Lopez the Guatemalan Hiroshima style Okonomiyaki grill chef, as well as the Flatts (an Autsralian / Japanese couple), who run a ryokan on the Noto peninsula and keep the food culture of the region alive. I enjoyed Goulding's food journey and look forward to reading his second book, Grape, Olive, Pig:Deep Travels Through Spain's Food Culture.
Five stars for content, deducted a star for Paperwhite formatting. Content GREAT - but the Kindle version has formatting issues that make important parts of the text difficult to read on Kindle Paperwhite. The supplementary text at the end of chapters is in light gray lettering. It's especially annoying because the text is black when you flip the page - then it flashes and become a lighter low-contrast color that is barely readable. It's fine on a computer or color Kindle.Roads & Kingdoms tells the story of place through food, history, people, and culture. If you are planning a trip to Japan, buy this book, without hesitation. I already had a trip to Japan planned, and the first two chapters have already convinced me that I will have a deeper understanding of what I'm about to experience because of this book. If you're not planning a trip to Japan, you will want to after reading this. It's making me want to plan a second trip to Japan already. The book is so rich in detail that I know I will only scratch the surface in my first visit. The prose is masterful, dense and engaging. It's a world beyond the typical travel guide that is little more than a list of trivia.The supplementary information is extremely useful, and none of it is contained in the preview sample. For example, "The Rules of Sushi' details how to properly eat different types of sushi - both to avoid committing an accidental faux pas, as well as to enjoy it in the intended manner: no ginger (it's a palate cleanser), no wasabi in the soy sauce, and always eat nigiri sushi in one bite. It has pictures of different types of sushi, with the name of the item in both English and Japanese script.It would be amazing if Roads & Kingdoms could update the Kindle version so the text of the entire book is legible in black and white. I even read the sample to check for formatting, since legibility is a very common problem on Paperwhite with anything other than plain black text. The pictures will of course need to be looked at on computer, phone, or color Kindle regardless, which is expected. Despite this, I am thrilled that I heard about this book on "Splendid Table". It will enrich my trip to Japan as well as my understanding of Japanese history and culture.
I was initially irritated after reading the first few chapters of this book. I found myself Googling the places or stuff mentioned in this book very often; I've also abandoned the book on many occasions for other books. That's why I took a few months to finish it. It's not that it's not good. But I didn't really like how often Matt wrote about all these exclusive places that only he could get access to because he had a special invite, and then he had the cheek to deny readers of information on how they could do likewise. On several occasions he also wrote about a few hush hush private dining places that he "couldn't" reveal the names and locations of. Then what is the point of telling his readers about them? At many times, I thought he simply wanted to flaunt his privilege and entitlement, and that was a major turn off. As I got into the middle and last few chapters, thankfully it took a turn for the better and he wrote about much more accessible places that we ordinary people could actually visit if we wanted to. It is well researched and well written no doubt, and I would still recommended it, despite the earlier chapters.
A different view of Japan highlighting the cuisine rather than its many temples, shrines and magnificent scenery. He artfully provides views of off-beat places with menus to try and interweaves them with characterizations that add depth to an understanding of why things are the way they are in these back alley places and haunts that the casual visitor would miss.Perhaps not for the faint of heart since he does delve into ingredients not normally found in your California Sushi Bistro or Local Grinds lunch wagon. Vegetarians beware! While a some of his narrative would please the palate of even the most dedicated vegans the majority of the book is dedicated to a carnivore diet.All in all a good read.
Fantastic read! I only know Japan through the people that I have been lucky enough to meet over the years from those islands, but this book convinces me that I must now go! And eat! Every story, every photograph is a triumph. The Roads and Kingdoms team has done an amazing job of giving The Reader insight into the country's culture through the lens of its food and a view of the Japanese mindset through the lens of its craftsmen and their dedication to perfection. Matt Goulding entertains while educating. My favorite thing: have fun while learning and enjoying a truly beautiful book. I agree with Bourdain's back cover comment: The world needs Roads & Kingdoms. It needs this book. Thank you for giving it to us.Now I have to go find some uni and plan a trip as soon as possible.
